A few more recipes to try at home - Orzo Pasta and Poppy Seed Dressing

Today I have some summertime recipes.  The first is a cold salad.  And then several ways to prepare great poppy seed dressings to use on lettuce salads and fruit salads.  June is National Salad month, so gear up with these great recipes.

Orzo and Herbs

This recipe is quick and simple and you can use several different seasoning blends to make it a different dish every time you serve it.

Bring water to boil in a large pot. Stir in the orzo and cook for 6 minutes. Place the herbs, oil, salt and pepper in a serving bowl, whisk together lightly. When the pasta is ready, drain well and add it to the bowl. Toss and serve whether hot or cold.

Honey Mustard Poppy Seed Dressing

  • 2/3 cup mayonnaise
  • 1 1/2 Tbls honey
  • 1 1/2 Tbls Dijon mustard
  • 1 Tbls white wine vinegar
  • 1 Tbls olive oil
  • 3 Tbls BYP Poppy Seed Dressing Mix

Combine all items in a bowl and whisk until well blended.  Serve over chicken or fish as a sauce or over fruit or regular salads.  Keeps up to 2 weeks in the refrigerator.

Lemon Poppy Seed Dressing

Blend together all items in a bowl with a whisk until well emulsified. Perfect on a strawberry salad or any combo of mixed greens.

* You can make a creamy lemon poppy dressing by adding ¼ cup sour cream or buttermilk to the above recipe.

Strawberry & Lime Poppy Seed Dressing

  • 1/4 cup strawberries, chopped
  • 1/4 cup lime juice (fresh is best, from about 2 limes)
  • 1/4 cup olive oil
  • 1 1/2 Tbls BYP Poppy Seed Dressing Mix

Combine strawberries and olive oil with lime juice in a blender.  Blend until well chopped and liquid.  Add BYP Poppy Seed Dressing Mix and stir or blend to incorporate.
